FALL RECIPE: High Protein Apple Pie

FALL RECIPE: High Protein Apple Pie

A high-protein breakfast that tastes like dessert!

If you love apple pie but also love hitting your protein goals, this recipe is for you! This Apple Pie Fluffy Yogurt Bowl is creamy, fluffy, packed with protein, and tastes like a cozy fall dessert.

Think warm cinnamon apples, fluffy vanilla yogurt, crunchy granola, and a little whipped cream on top. It's basically apple pie, but with 45 grams of protein!?

The best part? It takes less than 10 minutes to make.

Ingredients

Fluffy Yogurt Base

  • 170g plain Greek yogurt (I use Fage 2%)

  • 1 scoop vanilla protein powder

  • 1 serving sugar-free vanilla Jell-O pudding mix

  • 1 tsp baking powder

  • ¼ cup granola (Purely Elizabeth Cookie Granola is my favorite!)

Warm Cinnamon Apples

  • 1 small apple (125g), diced

  • Cinnamon, to taste

  • Pumpkin pie spice, to taste

  • 3–4 tbsp water

Optional Toppings

  • Cool Whip

  • Chopped walnuts

  • Extra cinnamon

Instructions

Step 1: Make the cinnamon apples.

Dice your apple into small pieces and place them in a microwave-safe bowl. Add cinnamon, pumpkin pie spice, and 3 tablespoons of water. Mix everything together and microwave for approximately 2 minutes, or until the apples are warm and softened.

Step 2: Make the fluffy yogurt.

In a separate bowl, combine the Greek yogurt, vanilla protein powder, sugar-free vanilla pudding mix, and baking powder. Stir or whip until everything is combined and the mixture becomes thick, creamy, and fluffy.

Step 3: Assemble your bowl.

Top your fluffy yogurt with granola and then layer the warm cinnamon apples on top. Make sure to get all the juices!

Step 4: Add your favorite toppings.

Finish with a dollop of Cool Whip, chopped walnuts, and an extra sprinkle of cinnamon (optional).

Grab a spoon and enjoy!
