"Banana Pudding" Fluffy Yogurt

Ever had a craving for banana pudding but also wanted to keep up with your fitness goals? 

I am here to save the day.

The other night I had a CRAZY craving for some good, old fashioned banana pudding. But at the same time... I wanted it to be low sugar and high protein so I could hit my macros for the day.

After some brainstorming and internet sleuthing - I came across a new "fluffy yogurt" recipe. This time? Only 5 simple ingredients! Arguably my easiest concoction yet and it may be the tastiest! 

I whipped this up in literally 5 minutes and ate the whole entire bowl. The next day I tried it again and this time (pro tip), I left it in the fridge for an hour or two before eating - OMG. The nila wafers get nice and soft and it quite literally tastes JUST LIKE BANANA PUDDING!!! 

Try out this recipe and let me know how you like it! 

RECIPE:

  • Plain greek yogurt - 1 serving (170G) 
  • Sugar free Jello banana pudding mix - 1 serving (1/4 bag) or 7 grams
  • Baking powder - 1 tsp
  • Banana - I used half or 50 grams
  • Mini Vanilla Wafers - I used 10 mini cookies on top
  • Sugar free cool whip - I prefer Truwhip & used 2 TBSP (or big dollops)

To make: 

Mix your yogurt, pudding mix and baking powder together. Let sit for 3-4 minutes so the yogurt can begin to "fluff" up. The top with bananas, wafers and cool whip. Mix together. If you have the time... refrigerate for 1-2 hours so it begins to soften and get more "pudding" like. Enjoy!

You could also lower the carbs + fat a smidge by taking out the cool whip + up your protein by adding a scoop of vanilla or banana protein powder! But man... it's pretty perfect the way it is ;)

Post refrigerator... A true, high protein, banana pudding DELIGHT!
